Grilled Orange Chicken

A little more healthy than the deep-fried version, it’s got all the flavor and zest needed for a great meal.
1 lb of boneless skinless chicken breast
1 tablespoon coconut oil or extra virgin olive oil
4 medium-sized oranges juiced
zest of 2 of the medium-sized oranges
2 tablespoons honey
3/4 teaspoon red pepper flakes
sea salt and cracked black pepper for seasoning
fresh cilantro for garnish
(optional) cornstarch and water for thickening
Wash and cut the chicken breast into 1” size cubes.
Season the chicken with sea salt and pepper. Grill or pan sear in the oil until cooked through and golden brown and delicious.
In a medium-sized bowl, add the honey, orange juice, red pepper flakes, and orange zest. Stir until combined well.
Once the chicken is finished cooking, add to the orange sauce and simmer for 5 to 10 minutes. For a thicker, richer sauce combine a little cornstarch and water then add to the pan. In just a minute or 2 the sauce will turn into a rich, shiny glaze.
Top with fresh cilantro and serve!
