John Madden’s Barbecued Hot Beef Sandwiches

Whoa! Ultimate tailgating (or even living room) food. It’s no wonder these have been so popular. Back when ABC still had Monday Night Football, John Madden showed up at Good Morning America in 1998 to pitch his new book, John Madden’s Ultimate Tailgating. These big, beefy sandwiches scored a touchdown with the cast and crew.
At our Mid-Century Home, we’ll make up this recipe using leftover chuck roast. They are always a hit whether the game is football or poker.
2 onions, chopped
2 tablespoons butter
2 garlic cloves
1/2 cup chopped celery
1 1/2 cups water
1/2 teaspoon dry mustard
2 cups ketchup
3 tablespoons apple cider vinegar
3 tablespoons Worcestershire sauce
4 tablespoons packed brown sugar
2 dashes paprika
1 teaspoon hot pepper sauce
1/2 teaspoon pepper
2 teaspoons salt
1 1/2 teaspoons chili powder
1 roast beef (3 pounds) cooked, cooled, shredded
1 dozen hamburger buns
In a skillet, brown onions in butter until tender. Deglaze the pan with water and vinegar.
Combine onions with the rest of ingredients and beef in Crock-Pot or slow cooker. Cover and cook on low 6 to 8 hours.
Serve on hamburger buns.
Makes 12 sandwiches.
