Key Lime Pie Mojito

I’d previously posted about my glee in finding out about Ke Ke Beach Key Lime Cream Liqueur. Since then I’ve found a formula for a spectacular Key Lime Pie Mojito. In addition to the Ke Ke Beach, it uses a ultra-premium Cuban-style lime and mint flavored rum. If you can’t find it in your area, you can substitute any bold West Indian rum, add the juice from the other half of the lime and add more mint leaves to suit your palette. My mint plants will soon be growing with wild abandon and the Mojitos will be flowing!
1 oz. Marti Mojito
1 oz. Ke Ke Beach Key Lime Cream Lime Liqueur
6 oz. fresh club soda
6 fresh mint leaves
1 tablespoon simple syrup
1/2 lime cut into 2 wedges
1 fresh mint sprig for garnish
In a highball glass muddle mint leaves and 1 lime wedge. Add syrup, Marti Mojito, Ke Ke Beach Key Lime Cream Liqueur and club soda. Squeeze 2nd lime wedge into glass and stir. Taste and adjust simple syrup to your liking.
