Sausage Stuffed Jalapeno Poppers

For those watching Carbs, this is a food of the Gods. I’m told they have only 4 net carbs per serving (which is 4-6 jalapeno half’s, depending on the size.) Even if they were 20, I’d still make’em and lov’em!
1 pound bulk Italian sausage or links remmoved from the casing (hot or mild or regular pork–whatever appeals to you)
8 oz cream cheese, softened
1 cup shredded cheddar cheese or shredded/grated Parmesan cheese
1 pound jalapenos, halved lengthwise and seeded
1 green onion, very finely chopped
Preheat oven to 425° F.
Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.
In a bowl, mix the sausage, cream cheese, cheddar cheese, and green onion.
Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in a baking dish.
Bake 20 minutes in the preheated oven, until bubbly and lightly browned.Adapted from and thanks to Low Carb Layla
