Bacon Rotel Cups

When I ran across this recipe I was looking for something simple and great for a high-roller event at the Symphony. Stumbled on to this and from that day forward it has become a must-have for every holiday and gathering. These are truly one of the best tastes I’ve ever had in my mouth!

Ingredients

  • 3 pkg. (45) mini Fillo Shells – thawed
  • 1 can original Ro*tel (drained almost all the way)
  • 1 bag Hormel bacon bits
  • 1 cup shredded swiss cheese
  • 1 cup Dukes or Hellman’s Mayo

Directions

  1. Add Ro*tel, bacon, swiss and mayo to a large mixing bowl. Mix well to be sure every bit is coated. Scoop evenly into the little cups.
  2. Cook at 350°F for 15 minutes until the tops are slightly golden brown and delicious.

Ro*tel OriginalDon’t know Ro*tel? It’s small diced tomatoes and green chilies in a Campbell’s Condensed Soup sized can. Great for lots of Tex-Mex recipes. Look for it where you find canned tomatoes.
